Mixed Berry Baked Oatmeal – Barefeet in the Kitchen

Baked oatmeal, filled with berries, and lightly sweetened with brown sugar is a great way to start the day. This berry baked oatmeal has been a favorite for over ten years now!

Berry Baked Oatmeal

This oatmeal recipe isn’t overly sweet, allowing the bright flavors of the berries to shine through. Berries are a mainstay in my refrigerator. We eat them out of hand most of the time, but they’re also a great addition to countless recipes.

The other day I had a few things that needed to be used up and baked oatmeal sounded like the perfect way to ensure the berries wouldn’t go to waste. I love the convenience of baked oatmeal for easy made-ahead breakfasts in the morning.

Baked oatmeal will keep nicely for several days in the refrigerator. And it will reheat perfectly in the microwave. I like to add a tablespoon or so of water to the cold oatmeal to help steam and soften it a bit as it warms. My boys prefer their baked oatmeal a little bit crispier on top, so they skip the water.

I try not to over-sweeten oatmeal when making it. It is easy to increase the sweetness to your tastes when serving it, with just a drizzle of honey or maple syrup – if the finished oatmeal needs to be sweetened at all.

Oatmeal is one of my children’s favorite breakfasts and we’ve gathered a huge collection of great oatmeal recipes over the past few years. I just looked them up and there are 46 oatmeal recipes here! Good grief, we clearly LOVE oatmeal.

Slow Cooker Oatmeal with Berries, Bananas, and Pecans, Peanut Butter Banana Baked Oatmeal, and Stovetop Apple Cinnamon Oatmeal are just a few of the recipes we make on a regular basis.

Not to mention, the Homemade Instant Oatmeal Mix that has a permanent place in our pantry. And did you know that you can make Granola in the Crock-Pot? It’s so easy!

My youngest son loves oatmeal so much, there was a time when he attempted to order it at almost every restaurant we visited. There is nothing quite like watching the waiter’s face when your child requests, “A big bowl of oatmeal, please,” while dining at a Mexican restaurant. Luckily, he loves chips and salsa almost as much, so it was easy to distract him.

The brown sugar can be increased to cup for additional sweetness. I like the recipe as it is written, as it isn’t very sweet at all. If you prefer your oatmeal a bit sweeter, go ahead and double the listed amount.
Honey may also be substituted for the brown sugar in this recipe.
FREEZER MEAL: Let the oatmeal cool completely and then cut or scoop into portions. Store the oatmeal in airtight freezer safe bags or containers. Reheat in the microwave with a tablespoon of water.
